Vegetable Rice

Delicious veg basmati rice.

Preparation time- 15 mins

Cooking time- 30 mins



  • Basmati Rice-2cups
  • Mixed Vegetables-4cups
  • Cashewnuts-10
  • Onion Sliced-1cup
  • Salt to taste
  • Lemon Juice-3tsp
  • Dry Fenugreek Leaves-2tsp
  • Garlic Flakes-6
  • Ginger-2tsp(chopped)
  • Fennel Seeds-2tsp
  • Coriander Seeds-1tsp
  • Cumin Seeds-1tsp
  • Cinnamon Stick-1
  • Cloves-4
  • Green Cardamoms-4
  • Bay leaf-1


1. Take a blender ,add cumin seeds, coriander seeds, fennel seeds, cloves, green cardamoms, cinnamon stick ,ginger ,garlic flakes and little amount of water. Blend it to a paste.

2. Boil all the vegetables ,strain it and wash it with normal water(blanched vegetables).

3. Toast dry fenugreek leaves. Keep it aside.

4. Heat the oil, add cashew and fry it. Keep it aside.

5. Fry the blanched vegetables with little bit of salt ,then remove from oil.

6. Heat oil .Add bay leaf and sliced onions, sprinkle salt and fry it until golden brown.

7. Then add prepared paste ,toasted fenugreek leaves and salt. Stir fry it.

8. Add fried vegetables ,basmati rice . Stir it properly, add 4 cups of water, salt and mix it properly. Cover the pan ,cook on low flame.

9. When rice gets cooked add lemon juice and fried cashew.

10. Garnish with fried onion.
