1. Wash all mangoes properly and rub with cotton cloth.
2. Remove the skin of the mangoes with the help of peeler and grate all the mangoes with the grater.
3. Take clean cotton cloth ,pour all these grated mangoes in the cloth and keep it in the sun for 6-7 hours.
4. When grated mangoes dry ,take it from the sun and keep it in the bowl.
5. Add salt,turmeric powder,mix up properly,cover with a cotton cloth and keep it for overnight.
6. Heat a pan,add garlic cloves,toast it,when it gets light brown,turn off the gas,after toasting clean the skin and mash it.
7. Keep all mashed garlics in the bowl,add extra virgin olive oil ,deep all the garlic in the oil.and keep it for few hours.
8. Again heat a pan,add mustard seeds,toast the mustard seeds and grind it.
9. Add salt in the heated pan,just 1 minute toast it and keep it in the bowl,in the same process add nigella seeds,toast it,keep it aside.
10.Take a big size bowl and mix up all ingredients, first add grounded mustard seeds,toasted nigella seeds,deeped garlic olive oil mixture,toasted salt,jamun vinegar,mix all of these,if needed can add extra virgin olive oil.
11. Pour the mangos in this mixture,mix up,cover it with cotton cloth and keep it in the sunlight for 1-2 hours.
12. Clean the glass jar and keep it in the sunlight to dry.
13. After few hours bring the mango mixture from the sunlight,open the cotton cloth and mix up.
14. After drying remove glass jar from the sunlight,pour mango pickles in this glass jar.
15. Pour extra virgin olive oil in the pickle,cut small piece of cotton cloth and cover the jar and keep it in the sunlight for few days.
16. Now healthy mango pickle is ready to eat ,it has a very good flavor of extra virgin olive oil and garlic combination.
