Very quick meal to make and are very healthy.

Preparation time- 10 mins

Cooking time- 10mins

Serve- 2


  • Zucchini-2 cup (sliced)
  • Egg-4
  • Salt to taste
  • Tomato-2
  • Extra Virgin Olive Oil
  • Garlic Cloves-4
  • Parsley Leaves-1 bunch
  • Coriander Leaves-1 bunch
  • Lemon Juice-2tsp
  • Black Pepper-1/4tsp
  • Mozzarella Cheese-1/2cup


1. Take a blender,add coriander leaves,parsley leaves,garlic cloves,salt,extra virgin olive oil and blend it to make a fine paste.

2. Transfer this paste into a bowl and add lemon juice.

3. Cut the tomato into round shapes and put it on the plate.

4. Sprinkle salt, black pepper, extra virgin olive oil on this tomatoes.

5. Put the pan on the gas,add olive oil,zucchini,salt and fry it.

6. Take a bowl, add eggs,salt.Beaten it properly.

7. Heat a pan.Add olive oil,pour the egg mixture on the pan to make an omelette.

8. Add fried zucchini and mozzarella cheese on the top of the omelette.

9. Put this omelette on the tomatoes which are kept on the plate.

10. Serve this cheese omelette with the prepared paste.
