Ingredients

  • Rice-1cup
  • Carrot-1cup
  • Cucumber- 1 cup(chopped with the peel)
  • Broccoli-10 medium florets
  • Black Olives-7-8
  • Jalapenos-5-6 slices
  • Salt to taste
  • Pepper-1tsp
  • Lemon Juice-3tbsp
  • Olive Oil-1.5tbsp
  • Onion-1 chopped
  • A pinch of sugar
  • Finely Chopped Parsley
  • Chopped Walnuts-2tbsp
  • Grated Coconut-3tbsp
  • Corn Kernels-1cup

Method

1. Heat water; add salt, lemon juice, oil to it. After the water boils add rice.

2. After boiling drain the rice and keep it aside.

3. Boil water with salt, add carrot in it .After boiling drain the carrot and keep it aside.

4. In a similar way boil broccoli with salt and lemon juice. Keep it aside.

5. Heat the pan add olive oil, chopped onion, salt and pinch of sugar. Sauté till golden brown.

6. Add chopped walnut, grated coconut and stir for few minutes.

7. Add chopped parsley, mix all the things properly.

8. Take a big bowl; add cooked rice, boiled carrot, boiled broccoli, cucumber, corn kernels and mix well.

9. Add black olives, jalapenos. Sprinkle salt, pepper, lemon juice, olive oil.

10. Pour the tempering over the rice mixture. Mix it properly.

11. The salad is ready for serving.
