Delicious mouthwatering dish which can be any type of heavy meal
Potato-5(boiled medium size)
Red spring onion-2 cup(chopped)
Green garlic spring onion-1cup(chopped)
Extra virgin olive oil
Baking powder-1 tsp
Bicarbonate of soda-1/2tsp
Coriander leaves-1 cup (chopped)
1. Finely chop in a chopping board green garlic spring onion,red spring onion,coriander leaves and green chilli.
2. Toast the cumin seeds,black pepper in a frying pan and ground it.
3. Take some potatoes and wash them, boil all potatoes and after few minutes remove the skin of the potatoes.
4. Take a big bowl,grate tofu and boiled potatoes,mix chopped green garlic spring onion,red spring onion,coriander leaves,green chilli.
5. Add salt,grounded spices,cinnamon powder,extra virgin olive oil and mix up properly.
6. In a bowl take all purpose flour add curd,oil,sugar,salt,baking powder,bicarbonate of soda and mix up with the help of lukewarm water .Make a dough.
7. Cover the dough and settle for one hour.
8. After one hour open the cover and make some balls from dough.
9. Take a ball ,sprinkle some flour on the surface and roll the ball with rolling pin.
10. Make two roti(flat bread),take one roti and spread potato tofu mixture and cover with another roti.
11. Close the edges of paratha properly and have to see that the stuff should not come out .
12. Make another type of paratha. Take one ball from the dough,roll the ball with the rolling pin,when round shape roti is ready put the stuffing on one side of the roti and then cover it with another side of it.
13. Now close the edges properly and have to see that the stuff should not come out.
14. Heat the pan ,and fry all parathas with cooking oil.
15. Serve the parathas from the hot pan.
